Bone Strengtheners 

More delicious recipes to strengthen those bones

Stuffed Mushrooms

Rich in antioxidants

Serves 4

You will need:

4 large field mushrooms

2tbsp olive oil

125g rindless smoked bacon dices

1 medium red onion, finely chopped

3 sticks celery, finely chopped

2 cloves garlic, crushed

75g fresh white breadcrumbs

75g brazil nuts, finely chopped

4tbsp chopped fresh parsley

Salt and ground black pepper

  1. Wipe the mushrooms then remove and finely chop the stalks. Brush the mushroom caps with olive oil and place on a baking sheet
  2. Heat the remaining oil in a frying pan; add the mushroom stalks, bacon, onions, celery and garlic. Cook over a medium heat, stirring occasionally, for 4-5 minutes
  3. Stir in the breadcrumbs, brazil nuts, parsley, and seasoning to taste. Spoon the breadcrumb mixture into the mushrooms, drizzle over a little olive oil and cook at 220oC/425oF/gas 7 for 15-20 mins or until tender. Serve with a green salad

Smoked Mackerel Paté

This paté is both tasty and a good source of omega-3s

Remove the skin and any bones from 200g smoked mackerel fillets and put in a food processor with 200g reduced-fat soft cheese and the juice of 1 lemon

Purée until smooth

Serve with warm, crusty bread or toast, and a watercress salad
